Chicken Hot Wings Recipe | Smoked & Fried Chicken Wings. I got the idea for smoking and frying these hot chicken Wings from Jason Gahnal at GqueBBQ. I did leave my chicken wings whole just to be a little different than the typical hot chicken wing. This is a great alternative to traditional buffalo chicken wings
Apply whatever seasoning you want on your chicken wings.
Smoke the wings at 275ish for 45 minutes.
Flash fry for 1 minute in canola, vegetable, or whatever oil you have that can withstand high temps.
Let the wings sit for a few minutes (I find that sauce doesn't stick to piping hot wings as well)
Add whatever sauce you want. I dipped my wings in the sauce because they were whole, and didn't want them breaking apart if I tossed them.
Put them in the oven, or smoker (if its still hot) at low 200s until sauce is set. Get your vittle on!
